Thunderbird question

I've been using Thunderbird since the HD with my /home partition crashed 
last week, mainly because my MH mail directory was not on my backups and 
~ I had a build problem with claws. In any case, I'm beginning to 
appreciate it. 

One question is composing. 90% of my email is sent in plain text, but 
there are times when I would like to compose in html. When I first set 
thunderbird up, I had html checked in my identity preferences, but I 
turned that off. What I would like to be able to do is while in the 
compose window, select html if I want to. I didn't see an extention that 
provides this. 

The other thing is if I compose in html, when I first brought up 
Thunderbird, I did get a dialog box when I sent the email to send in 
plain text or html, but I turned it off and I don't recall how to turn 
it back on.
