Thanks everybody for the responses!  Really good info and leads.  The PI 
Manufacturing place has some tool-less keystone jacks that look pretty 
cool, even has a slide show on how to use them:

The patch-panel advice that several people mentioned was something I 
hadn't even considered.  I was assuming I'd just go straight form the 
wall jacks into a switch, but I am starting to see why that's a bad 
idea. 

Now I just need to figure out how to get *my* projects higher priority 
on the "honey-do" list my wife has for me...
