Golly, I have a Dell Inspiron 7000 with Linux on it.
My friends Sony Vaio is running RH7.1.  If you go to
pcsforeveryone I am sure that they are willing to sell 
you a laptop system with Linux on it.  

So your options aren't limitted just to the iBook.
However, I do have to say that a friend of mine just got his 
and for $1400 it is extremely nice.
